fa فراوانی لیستریا در سبزیجات و سالاد آماده مصرف در تهران عمومى General پژوهشي اصیل Original Research زمینه و هدف: سبزیجات یکی از مواد اصلی سبد غذایی محسوب می شوند و مصرف آن ها رو به افزایش است. از طرفی بیماری ها و طغیان های ایجاد شده توسط این گروه از مواد غذایی نیز روند افزایشی پیدا کرده است. لیستریا یکی از باکتری هایی است که در طغیانهای غذایی با منشاء سبزی و سالاد گزارش شده است. هدف از این تحقیق بررسی وضعیت فراوانی لیستریا در سبزی و سالاد مصرفی شهر تهران بوده است. روش بررسی: در یک مطالعه توصیفی طی 6 ماه از اردیبهشت الی مهر سال 1392 ،100 نمونه از انواع مختلف سالاد از رستورانها و 100 نمونه از 10 نوع سبزی مختلف از سطح شهر جمع آوری گردید. نمونه ها بر اساس روش پیشنهادی FDA مورد آزمون قرار گرفتند. یافته ها: در مجموع 48 جدایه (24%) لیستریا با آزمایشات فنوتیپی شناسایی شد که از این تعداد 15 جدایه (5/7%) مربوط به سالاد های رستوران ها و اغذیه فروشی هاو 33 جدایه (5/16%) نیز مربوط به نمونه های سبزیجات بود.تنها 1 سویه (5/۰%) از گونه لیستریا مونوسایتوژنز از سبزی خوردن بدست آمد و بقیه متعلق به سایر گونه های لیستریا بودند. نتیجه گیری: نتایج این مطالعه نشان می دهد که خوردن سبزیجات خام یکی از راههای واقعی انتقال لیستریا می باشد و توجه بیشتر در امر آموزش بمنظور پیشگیری از مصرف سبزیجات خام و نشسته را می طلبد. واژه های کلیدی: لیستریا، سبزیجات، سالاد، طغیان. وصول مقاله:5/9/93 اصلاحیه نهایی:21/10/93 پذیرش:12/11/93 Background and Aim: Vegetables are considered as one of the main components of food basket and their consumption is on the rise. Meanwhile, disease outbreaks due to this group of food stuffs have been on the increase. Listeria is a bacteria related to disease outbreaks due to consumption of vegetables and salad. The purpose of this study was to investigate the prevalence of Listeria in vegetables and salads consumed in Tehran. Material and Methods: This is a descriptive study conducted from May to October 2013. 100 samples from different kinds of salads collected from different restaurants and 100 samples of 10 different types of vegetables were obtained from the city green groceries. Samples were examined according to FDA protocol. Results: 48 isolates (24%) of Listeria were identified by use of phenotypic tests from which 15 isolates (7.5%) were related to salads of restaurants and delicatessens and 33 isolates (16.5%) were related to vegetable samples. Only 1 isolate (0.5%) of Listeria monocytogenes was obtained from a ready to eat mixed leafy vegetable sample and the rest belonged to other Listeria species. Conclusions: The results of this study showed that consumption of raw vegetables is one of the main ways of transmission of Listeria. Therefore, health education on avoidance of consumption of raw and unwashed vegetables is necessary.
